The way you’ll sharpen your knife will depend on the sharpening tool you have. If you have sharpening steel that is usually free when you purchase a set of knives then you could use that. You just run the knife, serrate by serrate down and up the steel to sharpen its valley and point. Make sure that you wipe the sharpening steel properly to make sure that not burns from your previous sharpening session remain on the steel.

Boker Fixed Blade Knives

The Cutting Tool of Choice Since the 17th Century

In 1829, because of the restlessness and turmoil in Germany, Hermann and Robert Boeker (now spelled Boker) decided to begin manufacturing sabers. The symbol of their company was an outline of a giant chestnut tree that shaded their small tool factory.

Demand for their production was so great in Germany and neighboring countries, the brothers realized that for optimization, the individual steps in their manufacturing process needed to be spread out. Hermann moved to New York where he founded H. Boeker & Co., and Robert emigrated to Canada, and later to Mexico, where he founded a branch of the company in 1865. A market leader in Mexico, Casa Boeker is still producing some of the highest quality cutting implements in the industry.

Heinrich, another member of the Boeker clan, moved to Solingen, the center of the German cutting tool industry, and in 1869 founded Boeker & Co. with cutting tool specialist Hermann Heuser.

The relationship among the various components of the Boeker was, and remains, close, with the chestnut tree logo shared among the factories in many countries.

Among the many cutting tools manufactured by present-day Boker, perhaps the best known is the Boker Fixed Blade Knife. A multi-purpose implement that can be used in a variety of environments, Boker’s fixed blade knives come in a wide range of styles and sizes. There are a number of different processes or combination of process in the manufacture of fixed blade knives, and Boker uses most. Typically, the blades of these knives are made from carbon, tool, surgical, or stainless steel, but some are also forged from titanium. Some blades are layered steel, with as many as 300 layers of metal; others are a single layer of metal. While layered blades are flexible, the single layer of metal tends to produce a much stronger and durable blade. When being forged, the blade metal is heated and shaped with a hammer to achieve near the desired shape. Any layering is also done at this time. The final process is removal of stock to get the final shape, adding a handle, if any, and adding any decoration or folding.

Some fixed blade knives are cast as a single entity; blade and hilt. Others have a separate hilt, or handle, which can be made from stag horn, rubber, micarta, spauldite, or wood. The hallmark of the Boker fixed blade knife, whether a single piece or separate material in the hilt, is a handle that is constructed for ease of holding and using the knife.

Boker fixed blade knives are not inexpensive to obtain. Typically, the smaller single-case cutting tool will retail for prices starting at $40, with limited edition and larger more intricate knives selling for several hundred. For the knife collector, price is not the guiding feature, as really finely crafted knives appreciate in value. For the consumer who wants a quality cutting tool that will last a lifetime, Boker fixed blade knives are also good value for the money.

Carbon steel is an iron allow with carbon. It is a very common blade material that has been used for many years. These tough blades will not bend under pressure. It takes little effort to sharpen or re-sharpen a carbon steel blade knife, making it a good choice if you plan to sharpen your kitchen knives at home. However, tomatoes, citrus fruits, and other foods with a high acid content can discolor the blade, and rusting is possible.

Stainless steel, unlike carbon steel, does not discolor or rust. This iron alloy contains chromium, which makes it impervious to rust. However, this metal is softer, and therefore not able to maintain a very sharp edge like carbon steel. Although easily sharpened, the blade can be worn down quickly, meaning that it will need sharpening more often.

High carbon stainless steel knives are those made of a combination of carbon steel and stainless steel. With the best qualities from each, they are tough and able to hold a very sharp edge, yet do not discolor or rust.

Titanium blades are lightweight and flexible. They are often used to make knives with very thin blades, and are used for tasks such as boning or filleting. Titanium-edged knives hold a sharp edge longer than steel-blade knives.

Ceramic blades are much less resistant to breakage than steel knives. If dropped, they may crack or shatter. On the other hand, they will hold a sharp edge for many times longer than steel knives, and will not rust or discolor. However, ceramic blades must usually be sharpened by a professional, as sharpening them requires special equipment.

Most knives are also advertised as being either stamped or forged. Stamped knives are cut from a thin sheet of metal using a template. Stamped knives are usually inexpensive and lightweight, but they may need frequent sharpening. Forged knives are made by heating the steel and placing it in a mold. Forged knives are denser and heavier than stamped ones. The blade is very hard because of the heat, although it is also more flexible. Forged knives usually require less sharpening than stamped ones.

Finally, you’ll want to consider the knife’s grind. Grinding is done when first sharpening a blade or after a blade has been significantly damaged. The grind refers to the finished shape of the blade; some grinds are easier to maintain than others. Most kitchen knives are either hollow ground or taper ground. To form a hollow ground knife, a convex shape is removed from both sides of the edge. Hollow ground knives have a very sharp and thin edge, but these edges are fragile, so hollow knives are not meant to withstand heavy use. Flat or taper ground knives, on the other hand, taper smoothly with straight lines all the way to the edge, instead of with a curve. Taper ground knives leave more metal near the edge of the blade than hollow ground knives, meaning that they will withstand heavy use and not need sharpening as often.

Finding The Best Chef Knife

The goal of this article is for you to be able to purchase the highest quality kitchen knife set, for the best price possible.

I have a little different theory then most people when it comes to purchasing knives. Instead of getting a 17-piece set, I would rather own the minimum amount of knives that will complete 99% of my kitchen tasks. For the other 1% of tasks, I find it best just to improvise.

No matter how you cook, there are two basic knifes that you will need, a chef’s knife and a serrated knife.

A chef’s knife has a straight sharp edge and is about 8 to 10 inches in length. It really can be used for about 80% of kitchen tasks.

A serrated knife has a long jagged edge. This allows it to penetrate soft objects like a piece of bread of a tomato.

To two knifes above, take care of about 95% of my kitchen tasks. I could easily go without any other knife, but there are some knifes where the price is worth the specialized task they perform. An example of this is a pairing knife or kitchen scissors. Both knives are the best at performing very specialized tasks.

When purchasing a chef’s knife and a serrated knife, make sure you’re looking at forged blade knives instead of stamped blade. You will easily be able to tell the difference because a forged blade is hand molded to the handle. While a stamped blade is pressed with a machine.

A forged knife will always be superior to a stamped knife. The biggest advantage is durability. There is no easier way to get hurt while cutting then cutting with a stamped knife with a loose blade. A forged blade with proper maintenance, can easily last a lifetime and is a lot safer.

Now that you understand that you need to buy a forged knife, the next attribute to look for when buying a knife is size. Here is a rule of thumb for selecting the size of your knife. Take whatever cutting board you use the most and measure it diagonally. Preferably you want a knife that total is an inch or two less then your cutting board.

The last thing you need to think about while purchasing knives, is that it’s an investment. A quality, forged blade knife, with the proper maintenance can last a lifetime. Your knife should come with some sort of maintenance package. Make sure you read and follow it.

There are plenty of sharpening utensils available on the market. My favorite are a steel sharpening rod and a two stage knife sharpener. I don’t bother with the electric models. The regular models costs half as less, and do just as good job.

If you’re looking to boost your productivity in the kitchen, a quality set of knives is a great way to do so. For to long, I fooled around with cheap stamped blade knives. I didn’t realize, with good technique and a quality knife, I can cut my chopping, dicing, and slicing by about half the time.
