Bought this as my first set of knives. Appreciated the price. A little surprised at the craftsmanship. The knife handles are not made to perfection and there are some rough edges where the handle meets the metal blade of the knife. This does not cause much of a problem other than appearance. The knife block is well made. The slots for the knives go completely through the knife block allowing for ventilation, should you want it.

I just got these knives and I love them. Regarding the rust problem, all quality knives are made of high carbon steel. They will all rust if left in water. This includes henckles, shun, wustof ect.

Regarding the spaces that others have been complaining about, high quality knives are forged out of a single piece of metal. It is impossible to get a uniform shape for every knife this way. Chicago Cutlery uses a poly handle that has uniform in shape (unlike wood handles), hence the spaces.

These knives are very sharp. You can see how sharp a knife is by holding it loosely by the handle and pulling it over a tomato without applying pressure. I have done this with the sontoku from this et and it slices through like butter.

Handles are a matter of taste. these are thick handles, I like them this way. If you like thinner handles go with Shun. Of coarse one chef’s knife will cost you twice as much as this whole set.

The only minor complaint is the steak knives. Steak knives should be serrated; the steak knives in this set are basically long paring knives.

These are great knives and %99 of users will be just as happy with these as with a 0 set from henckles.

I bought these to replace a set of Mundial 5100′s that was lost. I wasn’t expecting such high quality from this set, but Consumers Digest selected these above many sets costing hundreds of dollars more (including the Mundial set that they reviewd) and I have to say this set is more than I expected for the price. I am not claiming they are better than the Mundial 5100 block set, but so far they’re pretty close.

Unlike some of the other reviewers, I haven’t found anything to complain about. The handles and blades are perfectly matched with no gaps or any other errors that I’m aware of. The blades are sharp, but to get them to the point of slicing produce paper thin they do need a couple of swipes through the built in knife sharpener (which I found works better for these knives than my Henckle dual sharpener). After I sharpened the utility knife I was slicing onions so thin that you could see through them. So I tried cutting tomatoes with the same results with very easy pressure the knife slid through the tomato literally as thin as you could possibly want to slice it.

I know that there are better knife sets out there but you are going to pay for them.

This set is perfect for the average home kitchen and again for the money they can’t be beat.

In college I was befriended by the only true playboy I’ve ever met. Roberto Cerinni. From Orange County, with an affected accent somewhere between Naples and Brooklyn, he presented himself as a foreign exchange student.

While the college world outside our doors wandered from one humdrum kegger to another, Roberto was hosting dinner parties that I’ve never been able to replicate: course after course, beginning with oysters on the half shell, fondue, marching through to trout almondine and always ending with his signature banana flambé. Throughout these nights, the mess grew ever worse, pans atop bowls, which horrified his true foreign exchange roommates. Roberto — laughing with a cavalier flair — never cleaned a thing until the next morning once he’d pulled a few shots from his Pavoni Espresso machine. Except for his knives.

Roberto had a beautiful set of vintage Sabatier knives. Always carefully oiling, and constantly drying and wiping his knives after every cut, they’d taken on slight patina (which actually helps protect them from rust). He explained that was from the high carbon content in the steel. Making them thinner, sharper and better knives, but more susceptible to stains.

While all steel has carbon in it, in typical knives, even many of the higher end drop-forged knives we’re familiar with, the carbon content is lower. This makes the steel more stain resistant, and more ductile, easier to bend and more resistant to cracking.

But while pluses to stainless knives abound, the beauty and craftsmanship of a higher carbon knife makes these the choice for the more patient and dedicated carver. Carbon steel knives can be sharpened to a finer point and can hold an edge longer. When needed, they’re easier to sharpen. Also, producers can make a thinner blade with carbon steel, resulting in a more ergonomic blade and handle.

A stainless steel knife, the more common knives today, don’t rust and tend not to pick up stains. Anyone who has left a knife of any sort in salty water overnight, or gone to bed with out wiping the tomato juice and seeds off their knife left on the counter, can attest that even the most “stainless” of knives should rather be called stain resistant. That said, if this occurs with a high carbon knife, like those found in the Thiers Region of France, it would require ages of scrubbing and a healthy dose of mineral oil to remedy this mishap.

Because all steel contains carbon, there’s no hard and fast rule for what constitutes a carbon steel knife. If true strength and function is your aim, and you’re willing to spend the time wiping and drying these knives, then the best, like the classic French knives, have a carbon content above .60%. More commonly, well-made, high-end knives today will have a carbon content hovering between .55% and .60%.

I have had these for a few years. After the first year one of the tips broke off. A couple of years later another tip broke off, this time cutting an apple.

I don’t have the warranty to know where to return these to, so I am stuck with them, but seriously I just want some better knives rather than paying to ship the bad ones somewhere and wait for a possible refund.

Even through I prefer Wustof to Henkels on the high end stuff, we have a cheap set of Henkels stamped steak knives that seem more sturdy and cut better than these.

These “fine” knives doesn’t stay sharp as long my Chicago Cutlery steak knives and the handles crack at the rivets. The logo-labels peel off leaving the adhesive on the handle. If they had a different sticker on the handle, they would be one quarter the price. I have a full set of Wusthof knives and there is no comparison.

I have a set of these steak knives and love them.

Unlike most inexpensive steak knives these knives are fine edge and not serrated. I like the cut of fine edge knives. They make clean cuts without shreading. These are stamped knives which are a lot less expensive than the forged Classic knives in my set but they look the same and for how much they are used they perform well at half the price of the forged knives. I have never had the rusting problem, but I hand wash all my knives. These are not stainless steel. I heard once that most of the time when knives rust it is because they are put in the dishwasher. The dishwasher leaves metal deposits on your flatware. When those deposits dry they turn to rust. Come to find out it is usually your dishwasher that is rusting when this happens. I never stick good knives in the dishwasher.

These are quite flimsy and develop rust spots extremely easily. Not the quality one would expect from this company. We have several of Wusthof Classic’s line (Chef’s, paring, utility, etc) have found them to be sturdy, true, well-balanced in the hand and have held up very well over the past 3 years in our busy kitchen. We didn’t expect these steak knives to be of the same quality, but they were suprisingly low quality for the brand and the cost.

These are not what you’d expect from Wusthof. The Wusthof symbol on the handle is a STICKER (!!!) which bleaches out after washing. Also, after 1 months use and washing, we’re getting rust spots. While these knives are sharp, they are not holding up appearance wise. Very disappointed.
