This electric sharpener is so simple to use that knives practically sharpen themselves. It puts a professional-style edge on any kitchen or sporting knife (except serrated knives). Because magnetic guides hold a blade at the proper angles, no guesswork is involved. You simply grip your knife loosely and pull it lightly through the sharpener’s slots without pressing down. Key to this knife sharpener’s performance is the two different stages: the sharpening stage and the second honing stage, which polishes the blade to a razor edge. Those two stages create different bevels, putting a “shoulder” on an edge instead of sharpening with a single bevel. The shoulder strengthens the edge so it lasts longer. For each stage there is a pair of slots, and the slots use 100 percent diamond abrasives for hardness. I have been sharpening knives for more than 60 years.I require my knives to be sharp enough to shave my arm.This sharpener has done that with every knife I own.

I own a Gerber Chef’s knife.It is no longer made.The Gerber food knives had the hardest steel and were a devil to sharpen.Because it was so hard, I could not get this knife sharp so it just sat in the knife safe.In less than five minutes, this sharpener made my old Gerber sharp enough to shave my arm.It is now my only Chef’s knife.

The final sharpening stones work like a fine sharpening steel.It makes the edge straight and perfect.A few passes on this final stage keeps the knives sharp.After getting the knife sharp the first time, you should use this stage many times before you need to use the more aggresive first stage.

You must be careful.Knives sharpened with this sharpener will cut you — I did it twice, and I know how to use a knife.My wife did it once.You must get used to sharp knives.
