The non-stick pans, while useful, do have the potential to flake off into your food.  The Teflon surface has not been proven to cause any health problems in humans, but it is best not to use these pans because the chemicals in the surface will wear off and health consequences are unknown. If you want to get a non-stick pan, grab a cast iron skillet (see #3).  The best stainless steel can be bought from All-Clad. If this is too expensive, there are other less-expensive skillets available from Calphalon and other companies.
  • Cast iron skillet: Cast iron skillets are non-stick and very useful for cooking almost anything, including eggs, cakes, and biscuits.Another benefit of using a cast iron skillet is that you will intake some iron (yes, the essential mineral) in your diet by it coming off the pan and into your food. These skillets are not expensive- just make sure you order a pre-seasoned one. You can get them from Lodge Cast Iron Cookware and other outlets.
  • 3 1/2 quart saucepan: A saucepan is needed to make sauces, heat up leftover soup, and even boil water to make oatmeal or rice. There are may saucepans on the market; make sure you get one that has a lid and is made of stainless steel. You can get them through All-clad, Calphalon, or other companies.
  • Soup pot: A soup pot is useful for not only making soup, but also boiling pasta. Here is a useful guide on what to look for in a soup pot. Same as the saucepan, look for pots that have a lid and are made of stainless steel.

Elizabeth's Favorite Knife: Wusthof 3 1/2-inch Paring Knife …

I have to admit, I’m not a big knife person. I don’t have really cool knives (just two very old Wusthofs, a Santoku, and a bread knife), I don’t sharpen them often enough, and I don’t feel a symbiotic flow of warm fuzzies when I hold my chef’s knife.

That said, they all get the job done, and this one works particularly hard these days. I slice bananas in the morning, strawberries in the middle of the day, broccoli florets for dinner, and lemons and limes for cocktail hour (mine, not hers).

These are all things a lesser knife could handle, but the task is so much faster with a good, sharp paring knife. It’s quick and super precise.

Of course, I also use this for peeling things, segmenting citrus, and, ok, opening plastic packages.

Kitchen Equipment: Kapoosh Knife Block — Food Heat

I haven’t been on this cooking gig all that long, but I’ve already found some tools, methods, and tricks that work well for me. I told you when I started this adventure I’d share these with you, so today let’s look at one of my favorite kitchen gadgets.

Though I don’t have an expensive collection of knives, I’ve come to learn that keeping my knives clean, dry, and sharp is one of the most important things I can do to keep the workflow in my kitchen, well, flowing. For too long our solution to knife storage was in the big catch-all utensil drawer, with the knives all banging together in a long tray. Invariably, my knives would come out dull, and it was always too hard to find the one I wanted buried under the rest.

We were in Bed Bath & Beyond a few months ago, drooling over the plethora of cook gadgets they have, when we ran across this ingenious little knife block called the Kapoosh. I knew one day it would be mine. I can’t remember what exactly drew me back into the store, but sometime later I found myself there, searching for something completely unrelated when I saw the Kapoosh on sale. Armed with my handy-dandy 20% coupon, I proceeded to the check-out counter with the nifty knife block in-hand.

Rather than being the standard slotted-style knife block, the Kapoosh is a wood (or sometimes plastic) container filled with hundreds of little plastic rods. The rods allow you to insert just about any size of knife, and it can usually accommodate many more knifes than a traditional knife block of the same size.

As you can see in the picture above, I even store my instant-read thermometer in my Kapoosh. The instructions warn you to be careful not to overfill the block, but as you can see there is more than enough room for my 16 favorite knives plus the thermometer. I keep my chef’s knife, a santoku, a tomato knife, paring knives, and several others of all sizes in my Kapoosh without any problems. The only knife I would like to add is our bread knife, but it’s simply too long to fit.

I read some negative reviews about the block, citing black plastic particles on the knife blades when withdrawn from the Kapoosh. For myself, I only experienced this at the very beginning, and it’s simple to wipe the blades clean with a dry towel before use if necessary. The entire plastic insert is removable and can be cleaned, however it does take some time to thoroughly dry. Keeping the insert dry is very important, as water is one of the many enemies of your knives. Just like a traditional knife block, you’d never put your knives away wet would you?

If you’re looking for a great knife block, I highly recommend you give the Kapoosh a serious look.

With the standard and bonus shears, you’ll have a good scissors for produce or meat and a pair for the rougher work of cutting paper, tape, and string. Two nice extras, the small santoku knives, add some versatility during small slicing or prep chores, but you may not find much advantage compared to standard blades. Santoku hollow ground blades do make a noticeable difference on larger knives.

  • Al Dente: "Razor Sharp and Dirt Cheap": The Victorinox Red Handle …

    I’ve been talking paring knives these last few days, but when Al Dente reader Paul A’Barge asked about the best paring knife for peeling shrimp, I knew I needed an expert opinion. So I phoned up Kevin Davis, the chef and owner of Seattle’s wildly popular Steelhead Diner and the recently opened Blueacre Seafood. Kevin was unequivocal in his response: the Victorinox red handle serrated paring knife. 

    Kevin loves this “razor sharp and dirt cheap” paring knife and says that it effortlessly removes both shells and intestines from shrimp. He also uses it to trim artichokes and says it’s great for delicate work too, like slicing a bit of egg white from a deviled egg to make it sit flat.

    In a restaurant kitchen, it’s easy for paring knives to go missing for days or get knocked into the garbage and disappear altogether. That’s why Kevin prefers this inexpensive gem of a knife over a more expensive one and buys several at a time. I’m guessing the red handle makes it a whole lot easier to spot on a crowded counter top too!

    You may not know that Victorinox is also the the maker of the Original Swiss Army Knife, a favorite of U.S. soldiers during World War II and today standard equipment on the Space Shuttle.
