About Ceramic Knife

Ceramic knives are a relatively new invention and always expensive. Basically, they’re made out of a high-purity zirconium oxide powder that is compressed at very high pressures and heated in a furnace at temperatures over 2700°F. This results in an extremely-hard blade, nearly as hard as diamonds.

SHARPNESS – The materials that make up a ceramic blade is very hard. It’s the second hardest material, ranked after diamonds. After it’s sharpened, it can keep its razor sharp edge and will not wear out.

NO METALLIC TASTE OR SMELL – Ceramic material is not very porous at all. This keeps the blade from transferring odors from one food item to another. You can cut something spicy, give it a quick rinse and then cut something else. The spiciness won’t transfer to the next food item.

SANITARY –The density of Ceramic blades is very high, and the blades have very little pores. Just like your face, the fewer pores there are, the less dirt and grime can get into the pores. A quick rinse in warm water can give your ceramic knife much clean than a thorough scrubbing on a metal knife.

LIGHTWEIGHT – Ceramic material is very light weight. The lighter the weight is, the less strain on your arms and shoulders. You can rip through all you’re cutting like a pro.

RUSTLESS -There is no metal, so there is never rust.

Test result

Cut one apple with a sharpened stainless steel knife and another with a ceramic knife. After 15 minutes, the apple cut with ceramic knife hardly oxidized at all (see right picture below), while the one cut with metal knife already showed some signs of discoloration. Fruits will not oxidize and turn brown so fast when using ceramic knife to cut it.

Ceramic Knife Care

  • Use it with a plastic or wood cutting board. Avoid cutting on marble, stone, glass, plates, or tile
  • Use your conventional steel knives for carving, prying, boning, and cutting frozen food and cheese. These applications involve twisting and flexing, which require a more flexible material than ceramic
  • Hand washing with water and liquid dish soap; Do not wash in the dishwasher
  • For discolorations not removed by normal washing, clean the blade only (not handle) with a mild bleach solution
  • Avoid dropping on hard surfaces
  • Avoid putting the blade in open flame (ceramic conducts heat)
  • Avoid turning the blade on its side to smash garlic or other items
  • Store in a knife block, sheath, or tray

Having a knife sharpener is the most impractical of practical kitchen appliances. You cannot prepare food without a sharp knife. From mincing to chopping to slicing to dicing, having a sharp knife makes these essential kitchen tasks an absolute joy.

So, after unboxing the Chef’s Choice 1520 AngleSelect Diamond Home Electric Knife Sharpener, I proceeded to sharpen all the dull knives in both of our knife sets. After dutifully performing its task, I summarily dismissed the knife sharpener to its storage closet. Talk about no reward for a job well done. But, why waste counter space for an appliance that will not be used again for a few months? So, the knife sharpener was feeling a little lonely and wanted some sun, so I started asking around for knives to sharpen and boy did I get a challenge. I really should have taken a before and after pic.

This time, I had a Chinese cleaver with a prominent nick. Wow. I knew this one was going to be a challenge. I re-read the instruction manual. Even though China is part of Asia, the manual indicated that Chinese cleavers should be sharpened as American/European style knives instead of Asian-style knives. After submitting the knife to a complete honing and polishing cycle, it was perfectly sharp. The nick was diminished, but still noticeable so I took the knife through a second honing and polishing cycle. This time, the nick disappeared. Success. I knew the Chef’s Choice Electric Knife Sharpener could put a sharp edge back on the knife, but wasn’t entirely sure about the nick. However, this worthy kitchen appliance passed the test. Good job. Not back in the storage closet you go.

Overall, this knife-set has a professional feel to it without an inflated price.

* Non-Serrated chopping knives – Non-Serrated is better suited for sharpening and chopping IMHO

* Balanced – so well, that you can practically balance it on your finger. That’s not the only benefit of a well balanced knife, I think it gives better cutting precision too.

Pros Summary: Precision + Sharpening = give me a hair to shred, SHARP!!!

* Didn’t seem sharp upon arrival. However, that was quickly remedied using a Presto Eversharp electric knife sharpener.

* Anxiety of the plague stain another reviewer mentioned. See note below.

* Hand wash recommended – The documentation recommended hand washing for best performance/durability. Could this have to do with the plagued stain Ann described? I hand wash just in case. This might seem inconvenient to some, but it’s also a trade-off to time/effort potentially saved from better performance of the knife (after sharpening). I wash, then dry immediately to avoid staining these beautiful knives.

Cons Summary: The cons can be eliminated by: 1) hand washing and drying immediatley 2) sharpening thoroughly 1-3 times upon receiving

I purchased this knife set after having held the chef’s knife and felt that I can love its wonderful weight and balance. It has the similar feel to a knife from another company which cost almost three times as much. I’ve had the set for about four months now and can not be happier. It’s a “humble” knife not heavy or impressive. Rather, it’s sleek and balanced and when it touches the food, it just naturally “sink” into the food and cuts with minimum pressure.

I had only a passing period of regret when some spots which looked like rust spots appeared on the knives. I scrubbed the spots off with an abrasive cleaning pad and it came off, but reappeared. Since everything else about the knives were so wonderful, I called the company’s customer service for help and they offered a replacement. They were very curteous and very nice. Excellent response.

The same type of spots appeared on the replacement, but because I could not bear to part and give up on the knife, I kept scrubbing the knife for several times. The spots have not come back again for over a month, now, so I no longer have to scrub them. In fact, they now look like new with just normal cleaning. Now, I wonder whether I should’ve been more aggressive with the first knives as well.

So, in sum, purchase these knives. They’re worth every penny. You won’t regret it. If some strange spots appear, give the knives a good scrubbing for a few times and they’ll be tamed. Enjoy!
