The Global Chef Knife, The G-2 is My Newest Kitchen Friend |

My old chef’s knife had slipped and left me with a cut finger and a run for the band aids. The knife, a gift from my mother, just was not cutting it (excuse the pun) anymore. It was time to start looking for a new knife because as even an on again, off again cook like me knows the 8 inch chef’s knife is one of the key tools for future cooking adventures. An old knife that cannot keep an edge, as I found out, is dangerous.

So I went looking at a replacement for my old dependable and found there are a lot of options. There are stainless steel knives, ceramic knives and many other types in every range from dirt cheap to mortgage-the-house expensive. The lucky break I had was that I was talking to a friend of mine who was a professional chef. He recommended a Japanese company called Yoshikin that made a product called Global Knives that he told me were some of best around for cooks.

On my friend’s recommendation, I did a little research on the company and its knives. Yoshikin started making Global kitchen knives in 1985 when Komin Yamada decided to make the best cutlery possible with modern technology. So he went back to the drawing board and redesigned the modern cook’s most important tool. He created a series of knives made of a single piece of steel, with many improvements over the standard series of kitchen knives.

The Global Chef knife version G-2 was one of the creations from that rethinking of the standard 8” (20 cm) chef’s knife. Moreover, the first major change is the material of the knife. The material that is used is CROMOVA 18 stainless steel. This combination of chromium, molybdenum, vanadium and stainless steel is specially designed for Global knives. The chromium prevents staining and dulling of the metal. The vanadium and molybdenum are two components that are added to stainless steel to help it keep its edge. Combined, it allows a very lightweight but strong knife that can keep a sharp edge for a long time with its high tech alloy.

Each blade I found is hand crafted in Niigata Japan at the YOSHIKIN factory. Each blade is ice tempered, which is a process that helps a stainless steel blade keep an edge longer. The blade is hardened to a Rockwell C56-58 rating (which is a scale that indicates the knives resistance to wear, the higher the number the more resistant the blade is to wear). Each blade has a face ground and a special steep grind and gradual curving edge that allows food to slip away easier from each cut and makes each cut easier.

The result is a thin, very sharp non-stain blade that will keep its sharpness for a long time. A warning though, if you are used to “duller” blades be very careful, because the blade is so sharp that if you are used to forcing your way through food you may easily find yourself nicking your other support hand because there will be little to no resistance by food to the cut. Take it easy until you get the feel of the knife.

Each knife is made from a single piece of steel, and that includes the handle. The handle is hollow and filled with either sand or metal for balance. As you move around the sand shifts letting you keep a firm feel as you use it. The handle has several black dimples around it to allow you to keep a firm hold on the knife. So despite having a metal handle there was no slippage no matter how wet my hand got. It was also the perfect size for my mid-size hands (people with large hands may have some trouble with the handle size). The single piece construction also makes it very easy to hand clean after use (never use a dishwasher to clean a good knife, the machine could damage your knife).

After all this research, I decided to get this as my next chef knife. I can say getting the Global Chef Knife was the best choice I made for my kitchen in a while. I took it out of the box and noticed its sleek design, the long stainless blade tapering to the black dimpled handle. I was making homemade stew that night so I had a perfect test bed. I started out with the carrots and potatoes. Pulling out my wood cutting board and then a bag of carrots, I started using the G-2. With my old knife, it was a chore cutting all the ingredients for a stew. There was no resistance to the G-2 knife as I cut through the carrots, and the slices were thinner than my old knife because of the thin blade of the knife and the easy handling.

The same was true for the potatoes, which were easy to cut with my new knife. This is where I also found out about having to adjust to a new knife and my above warning about getting adjusted to the sharpness of Global Kitchen Knives. I was slicing, not paying attention and afterwards have developed the skill of finding cheap prices on bandages.

Finally, I got around to adding the meat to the stew. I usually get a cheaper grade of beef, which it is a bit tougher to cut. Again, with the Global G-2, I was able to cut the beef into smaller chunks to add to my stew easily. Because of the fine balance of the blade, what would have tired my hand out before was done faster and with no fatigue. The stew was great and my friendship with my new knife was born.

I have used the Global Chef Knife for over three months now and it has still kept a razor sharp edge. In the next few months, I plan to get a diamond sharpener from Global. (Make sure you get the proper sharpener because a standard knife sharpener is not good for a Global knife). I look forward to a great kitchen relationship with my Global G-2.

My dad told me he wanted THIS EXACT SHARPENER for Christmas; so of course I got it for him. He wanted ONE sharpener for ALL his kitchen knives, smooth edged and serrated, his Swiss Army pocket knife, and anything else he could find to sharpen… maybe his chainsaw and lawn mower too, I don’t know. Now when I visit him, his knives are perfectly sharpened. He likes the fine grit as opposed to the very fine or medium, and he loves how it opens and closes, and how it handles when open and in use. I wouldn’t be surprised if he sleeps with it. He actually let me use it once (oooooh!) to sharpen a big, fancy Spiderco knife I have, and it’s just as perfect as he says it is. Maybe I’ll make him buy me one for Christmas this year.

The DMT Fine Diamond Serrated Knife Sharpener is useful in the right hands. It comes packaged with instructions on how to sharpen serrated blades. However if you have never sharpened a blade before, I’d suggest practicing on a “lesser” knife rather than pull out the best in the drawer.

The sharpening portion is reasonably long at 4.5″ and tapers to allow for different sized serrations. It does have a lightweight feel, but this should not be taken for flimsy. The item folds into its handle for packing or storage in a tool box.

If you were to get one sharpener – this might be it b/c you can sharpen normal blades on this as well as serrated ones.

For your complete honing needs, I’d first recommend the DMT FWFC Double-Sided Diafold Diamond Whetstone Sharpener Fine / Coarse to bring a damaged edge into line (removing nicks & surface variations) then finishing with the DMT FWEF Double Sided Diafold® Diamond Whetstone Sharpener Fine / Extra-Fine for a very sharp, smooth finish.

I’ve had this thing for many years now. When you’re on the fly and don’t have time to break out the stone to “sharpen” your knife, open this thing up, and perform a quick “hone” to realign the blade edge. Notice the difference. When it comes to pocket knives, I can sharpen them up pretty good with a dual composite stone. I also have a longer steel for the kitchen knives which I utilize to hone prior to each use. If the knife is of good quality, I’ll take it in for professional sharpening. There is a big difference between sharpening and honing. Sharpening remakes the blade’s edge. Honing takes that edges imperfections out or realigns the folded over or flat spots. Pull any knife out of your kitcnen drawer, look straight on at the edge, and you’ll see light reflecting off of the imperfections, unless you hone prior to putting it away. My opinion, knives banging against each other in a drawer messes them up. That’s why I hone prior to use.

I ordered this for my fiance and he loves it. He has sharpened every knife in our house and at his parents. It doesn’t look like much, but it definitely puts a sharp edge on any blade.

I ordered this particular one because it is sort of an all purpose, everday sharpener but even though it is only rated fine it still removes small nicks. We are going to buy the DMT ceramic extra-fine sharpener (white handle) too, so he can refine the edges even more.

This was kind of a throw away gift that turned into the best christmas gift of the year for him. I couldn’t find any reviews for this product anywhere else, so I hope that this one is helpful.

About Ceramic Knife

Ceramic knives are a relatively new invention and always expensive. Basically, they’re made out of a high-purity zirconium oxide powder that is compressed at very high pressures and heated in a furnace at temperatures over 2700°F. NO METALLIC TASTE OR SMELL – Ceramic material is not very porous at all. This keeps the blade from transferring odors from one food item to another. You can cut something spicy, give it a quick rinse and then cut something else. The spiciness won’t transfer to the next food item.

SANITARY –The density of Ceramic blades is very high, and the blades have very little pores. Just like your face, the fewer pores there are, the less dirt and grime can get into the pores. A quick rinse in warm water can give your ceramic knife much clean than a thorough scrubbing on a metal knife.

LIGHTWEIGHT – Ceramic material is very light weight. The lighter the weight is, the less strain on your arms and shoulders. You can rip through all you’re cutting like a pro.

RUSTLESS -There is no metal, so there is never rust.

Test result

Cut one apple with a sharpened stainless steel knife and another with a ceramic knife. After 15 minutes, the apple cut with ceramic knife hardly oxidized at all (see right picture below), while the one cut with metal knife already showed some signs of discoloration. Fruits will not oxidize and turn brown so fast when using ceramic knife to cut it.

Ceramic Knife Care

  • Use it with a plastic or wood cutting board. Avoid cutting on marble, stone, glass, plates, or tile
  • Use your conventional steel knives for carving, prying, boning, and cutting frozen food and cheese. These applications involve twisting and flexing, which require a more flexible material than ceramic
  • Hand washing with water and liquid dish soap; Do not wash in the dishwasher
  • For discolorations not removed by normal washing, clean the blade only (not handle) with a mild bleach solution
  • Avoid dropping on hard surfaces
  • Avoid putting the blade in open flame (ceramic conducts heat)
  • Avoid turning the blade on its side to smash garlic or other items
  • Store in a knife block, sheath, or tray
