Global Chefs Knives – The Origins and History of a Design Classic …

The first Global Chefs knives were designed in 1985 by Komin Yamada in Japan. Yamada was commissioned to produce a new and revolutionary set of Japanese chefs knives, using the latest manufacturing technologies and materials. The range of knives that he produced have proven to be popular with both professional chefs and amateur home cooks, as they are comfortable to hold and use and easy to maintain. Introduced from Japan to Europe in 1988, Global chefs knives were the first one piece stainless steel knife to be offered to the European market.

The design that Yamada produced was simple yet clever, and took inspiration from both Japanese chefs knives and cooks knives used throughout Asia. European knives such as Sabatier are usually made with a tang and bolster which the knife handle attaches to – Asian and Japanese knives do not have these as they are seen as a hindrance to both sharpening and cutting, and to the overall balance of the knife. For the Global chefs knife range, Yamada introduced a hollow handle which is filled with sand to get a correct balance.

To complete his design, Yamada included several further features unique to Global knives such as a smooth contour and a seamless all stainless steel construction. This design eliminates dirt and food traps and helps in the cleaning process – this gives the best result in safety and hygiene, essential in professional kitchens and in the home.

Although the materials and processes Yamada used to manufacture Global Chefs Knives was technologically advanced, the knife range has clearly taken inspiration from Japan’s long history of knife blade manufacturing. Over 1000 years ago, Japanese blacksmiths and swordsmiths developed and improved the process of making sharp yet strong knife and sword blades for the Samurai warriors. Although the Samurai tradition is now
ceremonial, those skills are still being used to manufacture high quality chefs knives. Japanese knives are famous over the world for this quality – Global chefs knives are now manufactured by Yoshikin, in the city of Niigata, Japan.

The material that Yamada chose to produce his knife range is not just stainless steel, but is one of the finest stainless steels available – Cromova 18. This is a proprietary stainless steel designed and used by Yoshikin exclusively for the manufacture of Global chefs knives. Cromova 18 has a chromium content of 18 per cent – which keeps the knife blades free of rust or stains, and means that although the steel is hard it is not too hard to sharpen. The MO and VA elements of the Cromova 18 name stand for the metallic elements molybdenum and vanadium.
These ensure that the knife retains the world famous Global chefs knife sharp edge.

174 – Best Kitchen Knives Sets

Whether an avid cook or a complete novice in the kitchen, every home chef needs to own a knife set. It’s the versatility of a set that makes them a great item to buy or receive as a gift; the problem is getting the right set for the budget. All to often folks will get a cheap kitchen knife set at a department store (Wal-Mart, Macy’s, Ross, etc.) and end up throwing them away in a year or two due to wear and tear or the blades becoming dull. Spending $20 to $30 seems like a great deal for a 8 piece set until it’s realized the quality that’s being received for said price.

While spending between $60 to $200 on a knife set may seem extravagant, many people don’t realize the value they’re truly getting. Most sets costing upwards of $100 will generally last a several years rather than months. Of course price isn’t everything, the key is doing the research and finding the best kitchen knives for the money and that is where this site comes in. We evaluate knife sets for any budget and provide the information needed for an informed purchased.

Best Sets for $100 to $200

Best Sets for $200+

Wüsthof Gourmet 14-Piece Knife Set – Buy At Amazon

What to Look for in a Quality Kitchen Knife

While shopping for a knife collection there are a hand full of things to look out for. Below are some of the primary attributes to look out for.

  • Blade Material Quality: Anything that’s not made from high-carbon stainless steel isn’t worth owning. This will ensure a long lasting blade sharpness and minimize the amount of personal maintenance to keep the blades sharp.
  • Production Style: There are two primary manufacturing methods to produce the blade portion of knives: forged and stamped/laser cut. A forged blade is the best kind of knife money can buy as it will maintain it’s sharpness the longest and be easier to sharpen. However, a barebones forged kitchen knife set will cost over $300 and really only needs to be considered by professional chefs or serious home cooks. A stamped and laser cut blade is slightly worst than a forged one but for the cost savings this method is more than enough for the casual home cook.
  • Weight Distribution and Handling: A full tang, meaning that the steel runs the full length of the handle, is most desired when using a knife. It ensures a steady grip and even handling which provides the control needed to handle a sharp object.
  • Versatility: Getting a set with multiple/non-duplicate kitchen knives is ideal. The more knives in the set the greater the cost, so be sure to pick a product that includes the most desired kitchen knives.

Other Notes and Advice

There are a handful of brands that need to be considered while shopping around. Easily the two highest rated manufacturers are Wüsthof and J.A. Henckels. They make the “best of the best” kitchen knives and I personally use a Zwilling J.A. Henckels Twin Signature Knife Set for the last couple years that works well for everyday use. For lower to mid-tier kitchen knives, look to Ginsu, Chicago Cutlery and Victorinox. They’ll provide decent quality at a lower price point for those on a budget.

Lastly, be sure to treat kitchen knives with care, especially if a good amount of money is going to be spent. They should always be hand washed to help maintain sharpness and reduce the effects of water stains or rust.

Customer Reviews:

Knife block review
An excellent value. Knives are sharp, block is good looking and does not take up much space. I am extremely happy with the purchase.

RUSTY
Okay so i recieve my knives…very quick actually and im all excited with them and when i open the last one i cut myself!..So be careful, eventhough they are pretty well wrapped, they are very sharp!. They look beautiful, scissors are a little cheap but they do the job.
The bad thing: eventhough they say they are DISHWASHER SAFE…one of them already has rust marks so i will not recommend you to leave em there for a wash, just hand wash them.
Overall not a bad product for the money.

good set
I like this set as it is compact and the knives cut well, already cut my finger. I was looking for a set that didn’t have steak knives because I already have them. I like the stainless steel and the block color. Scissors seem a litte bit “cheap” but they work.

Kyocera's 2010 Gift Guide: Number 1 | Kyocera Advanced Cutlery

Kyocera’s 2-Piece Revolution Gift Set

December is upon us and minds are wandering toward gingerbread, mistletoe, and of course, holiday gifts!  With so many high-performance kitchen tools to choose, why not give the gift of Kyocera Advanced Ceramics?  This December, the Kyocera Gift Guide makes your holiday shopping easy by introducing some of Kyocera’s most popular gifts.

The first great gift from Kyocera: the Revolution series two-piece gift set—selected as one of Oprah’s favorite things for 2010!  Kyocera’s Revolution series two-piece gift set features a 5.5-inch Santoku knife—perfect for working with vegetables, fruits, and boneless meats—and a 3-inch ergonomic paring knife.  This sleek gift set can be ordered with white or black blades.  An ideal cutlery starter set, these versatile knives make a thoughtful holiday present, hostess gift, or special treat for yourself.  Oprah received her Kyocera Advanced Ceramics knife as a present from renowned chef Ming Tsai.  Now it’s the only knife she uses in the kitchen!

What makes Kyocera ceramic knives so great?  For one, they’re ultra sharp.  Micro-grain ceramic creates a denser knife with a sharper cutting edge, which is why a Kyocera knife stays sharper ten times longer than a stainless steel knife.  If the knife ever stops cutting to the desired satisfaction, Kyocera offers complimentary blade-sharpening services for the life of the knife.  Kyocera ceramics offer a health-conscious alternative to stainless steel because it’s nonstick and less porous, which means metal ions, dirt, and bacteria won’t transfer to food.  Kyocera ceramic knives are also easy to use.  They’re lightweight and balanced, which makes for more even cuts and less muscle fatigue with prolonged use.  All this, in a rustproof knife that’s 50-percent harder and more durable than stainless steel!

If you like Kyocera’s two-piece gift set, you’ll love the other items in the Revolution series!  Featuring a slicing knife, a vegetable cleaver, and even a sushi knife, Kyocera cutlery is a true culinary treasure.  Just ask Oprah!
